The one type of cheese I know that won’t disappoint you is the good old sharp cheddar cheese. Place on manual high pressure for 4 minutes. I think it is a sin to use semi skimmed milk for mac and cheese. Pressure cook at high pressure for 3 minutes for whole wheat elbow pasta or 4 minutes for white elbow pasta.
